Ingredients

  • 2 eggs
  • 100g of breadcrumbs

Preparation

  1. Start by cleaning the chicken breasts, removing any bone or cartilage remnants, and pat them dry with kitchen paper.
  2. Lightly beat them with a meat tenderizer to flatten them evenly; this will help them to cook more quickly and evenly.
  3. In a wide bowl, place the flour and season it with a pinch of salt and pepper.
  4. In another bowl, beat the eggs with a pinch of salt.
  5. Finally, place the breadcrumbs in a third bowl.
  6. Coat each chicken breast in the flour, making sure to cover it entirely. Then dip it into the beaten eggs and, lastly, into the breadcrumbs, ensuring that it adheres well for an even coating.
  7. In a wide and deep frying pan, heat a generous amount of vegetable oil to a temperature of about 170-180°C.
  8. Fry the breaded chicken breasts until they are golden brown and crispy, about 3-4 minutes per side, depending on thickness.
  9. Drain them on paper towels to remove excess oil and serve hot.
