Fried Bombs

Fried bombs, also known as bomboloni or krapfen in some regions, are a leavened and fried dessert that is then filled with custard, nutella, jam, or other delicious fillings. Here is the recipe to prepare classic fried bombs with custard filling.

Ingredients

  • 500 g of 00 flour
  • 120 ml of lukewarm milk
  • 100 g of sugar
  • 100 g of soft butter
  • 2 whole eggs
  • 1 yolk
  • 25 g of fresh brewer’s yeast
  • Grated zest of 1 lemon
  • 1 pinch of salt
  • Custard for the filling
  • Powdered sugar for garnishing
  • Oil for frying

Preparation

  1. Dissolve the brewer’s yeast in the lukewarm milk with a teaspoon of sugar taken from the total.
  2. In a large bowl, mix the flour with the remaining sugar, and make a hole in the center where you will add the eggs, the yolk, the soft butter in pieces, the grated lemon zest, and the pinch of salt.
  3. Add the dissolved yeast in milk and start to knead first with a spoon and then with your hands until you get a homogeneous mixture.
  4. Cover the dough with a clean cloth and let it rise in a warm place for about 2 hours or until it doubles in volume.
  5. After the leavening, roll out the dough on a lightly floured surface to a thickness of about 1.5 cm.
  6. With a round pastry cutter or a glass, cut out discs of dough.
  7. Let the dough discs rise again covered for about 30 minutes.
  8. In a large pan, heat the oil to a temperature of about 170 °C and fry the bombs until they are golden on both sides.
  9. Drain the fried bombs on paper towels to remove excess oil.
  10. Once they are cool, fill them with custard using a pastry bag.
  11. Dust the bombs with powdered sugar before serving.

Curiosità

The bombs were originally a dessert eaten during the carnival period, but they gained so much popularity that they can now be found in pastry shops all year round. In some Italian regional variants, you can also find bomboloni with dough flavored with orange or vanilla.
