Fried Angel Wings with Arugula and Cherry Tomatoes
17/11/2023Fried angel wings are a tasty and simple dish to prepare. If you want to combine the freshness of arugula and the flavor of cherry tomatoes, this can become an ideal appetizer or a light, colorful second course.
Ingredients
- 250 g of pizza dough
- Oil for frying (olive or seed, as preferred)
- 100 g of arugula
- 150 g of cherry tomatoes
- Salt, as needed
- Black pepper, as needed
- Oregano, optional
- Parmesan cheese (optional, for grating)
Preparation
- Roll out the pizza dough on a lightly floured surface until it is about 2-3 mm thick.
- With a pasta cutter wheel or a knife, cut the dough into rectangles or diamonds of about 10 cm on each side.
- Heat a good amount of oil in a frying pan and, once it has reached a temperature of about 180°C, fry the angel wings until golden brown on both sides.
- Drain them on paper towels to remove excess oil and salt them lightly.
- Wash the cherry tomatoes and cut them in half or into quarters, if you prefer.
- Wash and thoroughly dry the arugula.
- Arrange the fried angel wings on a serving dish, alternating them with arugula leaves and cherry tomatoes around or on top of them.
- Add a pinch of black pepper and, if desired, a bit of oregano to enhance the flavors.
- If you wish, you can also add shavings of Parmesan cheese to enrich the dish.
- Serve immediately to enjoy the crispness of the angel wings.
