Fresh Strawberry Tart

The fresh strawberry tart is a delicious dessert that combines the fragrance of shortcrust pastry with the sweetness of fresh strawberries and a light custard cream. Here’s how to prepare it.

Ingredients

  • 250g of all-purpose flour
  • 125g of cold butter, cubed
  • 100g of powdered sugar
  • 1 large egg
  • Grated zest of 1 untreated lemon

For the custard cream:

  • 500ml of whole milk
  • 4 egg yolks
  • 120g of sugar
  • 40g of all-purpose flour or cornstarch
  • 1 vanilla bean or vanilla extract

For the decoration:

  • 500g of fresh strawberries
  • Dessert gelatin (optional)

Preparation

  1. Start by preparing the shortcrust pastry: in a bowl, mix the flour and powdered sugar, then add the cold butter cubes and start working with the tips of your fingers until you get a sandy mixture.
  2. Add the egg and lemon zest, then quickly work to form a uniform dough. Wrap the dough in cling film and let it rest in the fridge for about 30 minutes.
  3. Meanwhile, prepare the custard cream: heat the milk with the vanilla and in another bowl, beat the egg yolks with the sugar until frothy. Add the flour, mix well, and then pour in the hot milk, a little at a time.
  4. Return the mixture to the heat and cook over low heat, stirring constantly until the cream thickens. Remove from the heat, transfer to a bowl and cover with cling film in contact. Allow to cool.
  5. Roll out the shortcrust pastry into an even layer and line a previously buttered and floured tart mold. Prick the bottom with a fork, cover with baking paper and cooking weights (such as dry beans) and bake at 180 °C for about 15 minutes.
  6. Remove the paper and weights and bake for another 5-10 minutes until golden. Allow to cool completely.
  7. Spread the cold custard cream on the base, then decorate with fresh strawberries cut in half or sliced.
  8. If desired, you can add a brush of dessert gelatin on the strawberries for a glossy finish.
