Ingredients
- 200 g of type 00 flour
- 2 whole eggs
- 4 egg yolks (one for each bundle)
- Salt to taste
- 50 g of ricotta
- Chopped chives
- Freshly ground black pepper
- Butter to taste
- Sage leaves
- Grated Parmesan cheese

To begin, prepare the fresh pasta by kneading the flour with the 2 whole eggs and a pinch of salt. Work the dough until you get a smooth and homogeneous ball, then cover it with a damp cloth and let it rest for about 30 minutes.

In the meantime, mix the ricotta with chopped chives, salt, and pepper to taste. This will be the filling.

After resting, roll out the dough as thin as possible using a rolling pin or a pasta machine, obtaining a thin sheet.

Cut the sheet into squares of about 10 cm on each side. In the center of each square, place a teaspoon of the ricotta and chive filling.

Gently lay a raw egg yolk on top of the ricotta filling.

Close the pasta square on all four sides by bringing the corners upward, forming a bundle. Use a little water to seal the edges if needed.

Bring a pot of salted water to a boil and cook the bundles for about 2-3 minutes or until the pasta is al dente.

Meanwhile, in a non-stick pan, melt the butter and add some sage leaves for flavor.

Gently drain the bundles and transfer them to the pan with butter and sage. Sauté them briefly on both sides.

Serve the bundles hot, finishing with a sprinkle of grated Parmesan and a final touch of pepper.
