Fresh Cherry Tart
17/11/2023The fresh cherry tart is a classic and delicious dessert. Here is the recipe with an Italian twist:
Ingredients
For the shortcrust pastry:
- 300 g of type “00” flour
- 150 g of cold butter, cubed
- 120 g of icing sugar
- 1 large egg
- 1 yolk
- Grated zest of 1 lemon
For the filling:
- 500 g of fresh, pitted cherries
- 100 g of granulated sugar (or more, depending on the sweetness of the cherries)
- 1 tablespoon of cornstarch (cornflour)
- A pinch of cinnamon (optional)
For the finish:
- Icing sugar for dusting (optional)
- Flaked almonds for decoration (optional)
Preparation
- Begin by preparing the shortcrust pastry: in a bowl, mix the flour and icing sugar. Add the cold butter and work quickly with the tips of your fingers until you get a sandy mixture.
- Add the egg, yolk, and grated lemon zest and knead until you form a smooth dough ball. Wrap in cling film and let rest in the refrigerator for about 30 minutes.
- Meanwhile, prepare the filling: in a bowl, combine the pitted cherries with granulated sugar, cornstarch, and a pinch of cinnamon if desired. Mix gently and let it flavor.
- Preheat the oven to 180 °C. Roll out the shortcrust pastry on a lightly floured surface to a thickness of about 5 mm and line a previously buttered and floured tart pan.
- Prick the bottom with a fork and pour the cherry filling in the center. If you have excess pastry, you can cut strips to create a lattice, or shapes at will to decorate your tart.
- Bake for about 40-45 minutes or until the pastry is golden and the filling is slightly caramelized.
- Allow to cool completely before dusting with icing sugar and garnish with flaked almonds, if desired.

The cherry tart is a dessert that announces the arrival of summer and the wonderful cherry season. Cherries are fruits rich in antioxidants and add a bright red color to your tart, making it a true feast for the eyes and palate!
