Fresh Apricot and Almond Cake
17/11/2023The fresh apricot and almond cake is a delicious summer dessert that combines the sweetness and acidity of apricots with the rich flavor of almonds. I present to you a recipe that will allow you to make this dessert. Make sure you have all the necessary ingredients.
Ingredients
- 150g of 00 flour
- 100g of almond flour
- 150g of sugar
- 150g of butter at room temperature
- 3 eggs
- 1 packet of baking powder
- 1 pinch of salt
- Grated zest of 1 lemon
- 1 teaspoon of vanilla extract (or the seeds of 1 vanilla pod)
- 6-8 fresh apricots, washed, pitted, and cut into wedges
- Icing sugar for dusting (optional)
Preparation
- Preheat the oven to 180 °C and butter and flour a cake pan that is about 24cm in diameter.
- In a bowl, mix the 00 flour, almond flour, baking powder, and a pinch of salt. Set aside.
- In another bowl, cream the soft butter with the sugar until light and fluffy.
- Add the eggs, one at a time, making sure to incorporate each one well after adding.
- Stir in the grated lemon zest and vanilla extract, then mix well.
- Gradually incorporate the dry ingredients (the flour mixture) into the egg and butter mixture, mixing until you have a homogeneous batter.
- Pour the batter into the prepared pan and level the surface with a spatula or spoon.
- Arrange the apricot wedges on top of the batter, pressing them down lightly to adhere.
- Bake the cake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Before serving, you may dust the cake with icing sugar, if desired.

Apricots are fruits widely used in Italian pastry, especially in the more rustic and homemade versions of sweets. Almonds, on the other hand, mainly come from southern regions like Sicily, where they are used in many sweet and savory preparations, both whole and as flour. This cake thus encapsulates very Mediterranean and traditional flavors.
For an extra touch, you could also add a light layer of apricot jam spread over the baked but still warm base to intensify the taste and for a shinier finish.
