Fregola with Scampi and Prawns

I can provide you with a recipe for fregola with scampi and prawns, a delicious and typical dish of Sardinian cuisine that we have revisited with a more general Italian touch.

Ingredients

  • 250 g of Sardinian fregola
  • 200 g of fresh scampi
  • 200 g of fresh prawns
  • 1 clove of garlic
  • Extra virgin olive oil
  • Chopped parsley
  • Salt and pepper to taste
  • 1/2 a glass of white wine
  • Fish broth as needed
  • Cherry tomatoes

Preparation

  1. Clean the scampi and prawns by removing the shell and the intestine, then set them aside.
  2. In a large pan, lightly fry a clove of garlic in extra virgin olive oil.
  3. Add the scampi and prawns and sauté over high heat for a couple of minutes.
  4. Deglaze with white wine and let the alcohol evaporate.
  5. Add cherry tomatoes cut in half and cook for a few minutes.
  6. Meanwhile, bring some fish broth to a boil in a separate pot.
  7. Add the fregola to the pan with scampi and prawns, moisten with the hot fish broth, and cook following the times indicated on the package, adding more broth as needed to keep the mixture moist.
  8. At the end of cooking, season with salt and pepper, sprinkle with chopped parsley, and toss with a drizzle of extra virgin olive oil.

Curiosity

Fregola is a type of Sardinian pasta that comes in the form of small spheres, similar to couscous but larger in size. Its particular consistency makes it perfect for absorbing the flavors of the broth and the seasonings with which it is cooked, making it an excellent match for the delicate flavor of scampi and prawns.
