Stuffed Frappe with Ricotta and Chocolate Chips

Preparation

  1. Start with the frappe dough by mixing flour with granulated sugar, grated zest of lemon or orange, and a pinch of salt in a bowl.
  2. Add the egg, melted butter, and chosen liquor. Work the dough until it becomes smooth and elastic. If it’s too dry, add a couple of tablespoons of cold water.
  3. Form a ball with the dough, wrap it in plastic wrap, and let it rest for about 30 minutes at room temperature.
  4. For the filling, mix the ricotta with icing sugar until it becomes a smooth and homogeneous cream. Incorporate the chocolate chips, cinnamon, and grated zest, if desired, and put the filling in the fridge.
  5. Roll out the frappe dough very thinly on a floured surface and cut out rectangles or shapes as desired.
