Four-Color Cheese Truffles

Ingredients

  • 200 g of fresh goat cheese or sheep’s milk ricotta
  • 50 g of gorgonzola cheese
  • 50 g of grated Parmesan cheese
  • 1 tablespoon of fresh cream (if necessary)
  • Sweet paprika
  • Finely chopped chives
  • Poppy seeds
  • Finely chopped nuts
  • Pepper (optional)

Preparation

  1. Start by preparing the base cheese by dividing the goat cheese or ricotta into three separate bowls.
  2. In one of the bowls, add the gorgonzola and work the two cheeses together until you have a smooth mixture. If the mixture is too thick, you can add a tablespoon of fresh cream to soften it.
  3. Leave the cheese in one of the other bowls natural to have white truffles.
  4. In the third bowl, add grated Parmesan cheese and, if you wish, a pinch of pepper to make yellow truffles.
  5. Once you have created your three mixtures, start forming small balls with your hands.
  6. For the red truffles, roll some of the balls in the sweet paprika.
  7. Roll other balls in the finely chopped chives for the green truffles.
  8. For the black truffles, use poppy seeds.
  9. Lastly, for the brown truffles, roll the remaining balls in the finely chopped nuts.
  10. Place the truffles in the refrigerator for at least one hour before serving them, so that they firm up.

You can serve these four-color truffles on a serving plate or on small toothpicks. Each one presents a different flavor note thanks to the cheese and the chosen coating, offering your guests a variety of tastes.
