Four Cheese Quiche

The four cheese quiche is a rich and flavorful French cuisine dish, perfect for a light meal or a starter. I will guide you through the preparation of the classic version and then I will suggest an Italian twist. Here are the ingredients and the procedure.

Ingredients

  • 1 roll of brisée pastry (or puff pastry)
  • 200 g of grated emmental cheese
  • 150 g of fontina cheese cut into cubes
  • 100 g of gorgonzola
  • 100 g of grated parmesan cheese
  • 3 whole eggs
  • 200 ml of cooking cream
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste

Preparation

  1. Preheat the oven to 180°C.
  2. Roll out the brisée pastry in a quiche pan and prick the bottom with the tines of a fork.
  3. In a large bowl, beat the eggs with the cooking cream. Add salt, pepper, and a grating of nutmeg to taste.
  4. Add the four cheeses to the egg and cream mixture, setting aside a handful of parmesan for topping the quiche.
  5. Pour the mixture of cheese and eggs onto the pastry base in the pan.
  6. Sprinkle with the reserved parmesan for topping.
  7. Bake the quiche for about 30-35 minutes or until the surface is golden and puffed.
  8. Remove the quiche from the oven and let it rest for a few minutes before serving.

To add an extra Italian touch, you could try substituting one of the French cheeses with a good sweet or spicy provolone, which will give your quiche a slightly bolder flavor.

Curiosities

The quiche originates from the historical region of Lorraine in France, and was traditionally made with smoked bacon. The four-cheese version is a more recent variation that exploits the richness and variety of French cheeses.
