Berry Aspic

Berry Aspic is a refined dessert, perfect to conclude a meal, especially in the hot periods. Here is the recipe to prepare it.

Ingredients

  • Water, 500 ml
  • Sugar, 150 g
  • Sheet gelatin, 12 g
  • Lemon juice, from 1 lemon
  • Mixed berries (raspberries, blueberries, strawberries, currants), 400 g
  • Fresh mint for garnish (optional)

Preparation

  1. Begin by soaking the gelatin sheets in cold water for about 10 minutes until they become soft.
  2. Meanwhile, bring the water to a boil with the sugar in a small pot, stirring to dissolve the sugar well.
  3. Once the sugar has completely dissolved, remove the pot from the heat and squeeze the softened gelatin to eliminate the excess water. Add it to the hot liquid and stir until fully dissolved.
  4. Add the lemon juice to the mixture and let it cool down.
  5. Distribute the berries into single-serving molds or into a large aspic mold, and pour over the now lukewarm gelatin liquid.
  6. Refrigerate for at least 4 hours, or until the aspic has completely solidified.
  7. Before serving, you can briefly dip the mold in hot water to help release the aspic, then invert it onto a serving plate.
  8. Garnish with fresh mint to add a touch of freshness and color.
