Flourless Chocolate Indulgence Cake
17/11/2023The flourless chocolate cake is a delicious option for those following a gluten-free diet or simply for those looking for a rich and melting dessert. Here’s how to prepare it.
Ingredients
- 200 g of good quality dark chocolate
- 200 g of butter, plus a little more for greasing the cake pan
- 200 g of granulated sugar
- 4 large eggs (yolks and whites separated)
- A pinch of salt
- Icing sugar for decoration (optional)
Preparation

Preheat the oven to 175 °C and butter a springform pan of about 20 cm in diameter, then line the bottom with parchment paper.

Break the chocolate into small pieces and cut the butter into cubes. Place them in a large heat-proof bowl, then melt them over a bain-marie, making sure the bottom of the bowl does not touch the water. Stir until both are completely melted and smooth. Remove the bowl from the heat and let it cool slightly.

Add the sugar to the chocolate and butter mixture, stirring until incorporated.

Incorporate the egg yolks one at a time, mixing well after each addition.

In another bowl, whip the egg whites with a pinch of salt until stiff peaks form.

Gently fold the whipped egg whites into the chocolate mixture in multiple additions, being careful not to deflate them. Use a bottom-to-top motion with a spatula.

Pour the batter into the prepared pan and level the surface.

Bake for about 25-30 minutes or until the cake is puffed and the surface appears set (although the interior will still be soft).

Remove the cake from the oven and allow it to cool completely in the pan before removing it.

Dust the surface with icing sugar before serving, if desired.

This cake is also known as “Caprese cake” if you prepare it with milk chocolate and chopped almonds, originating from the beautiful island of Capri. Its moist and dense texture is universally appreciated. It is said to have been created by “mistake” when a baker forgot to add flour to his chocolate cake!
