Fisherman's baby octopus

Fisherman’s baby octopus is a delicious dish typical of sailor-style cuisine. Here is the recipe to prepare it.

Ingredients

  • 1 kg of cleaned baby octopus
  • 4 cloves of garlic
  • 1 glass of white wine
  • 400 g of cherry tomatoes
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt
  • Pepper

Preparation

  1. In a large pan, fry the chopped garlic cloves with a drizzle of extra virgin olive oil.
  2. Add the cleaned baby octopus and sauté over high heat for a couple of minutes, turning them frequently.
  3. Deglaze with the white wine and let the alcohol evaporate on high heat.
  4. Add the cherry tomatoes, halved, lower the heat, and cover with a lid. Cook for about 30-40 minutes until the octopuses become tender. If necessary, add some water during cooking to prevent the sauce from drying out too much.
  5. Season with salt and pepper, then sprinkle with chopped fresh parsley before serving.
