Fish tacos

I will introduce you to a version with an Italian twist of the classic fish tacos. You might think of an Italian salsa with tomatoes, basil, and perhaps a bit of capers or olives to accompany the fish.

Ingredients

For the tacos:

  • 400 g of white fish fillets (such as cod or tilapia)
  • 8 small corn or flour tortillas
  • Extra virgin olive oil
  • 1 lime (for juice)
  • 1 teaspoon of cayenne pepper
  • Salt and pepper to taste

For the Italian salsa:

  • 250 g of cherry tomatoes
  • 1 clove of garlic
  • A bunch of fresh basil
  • 2 tablespoons of pitted black or green olives, as you like
  • 1 tablespoon of capers, rinsed and chopped
  • Extra virgin olive oil
  • Salt to taste

For the garnish:

  • 1 ripe avocado, sliced
  • 1 cup of red cabbage, finely sliced
  • Fresh coriander, chopped (optional)

Preparation

  1. Start by preparing the salsa. Cut the cherry tomatoes in half and put them in a bowl. Add chopped garlic, torn basil leaves, olives, capers, and a pinch of salt. Dress with extra virgin olive oil and mix well. Set aside to let the flavors meld.

  2. Rinse the fish fillets and pat them dry with a kitchen towel. Cut the fish into wide strips. In a bowl, mix the juice of half a lime, olive oil, cayenne pepper, and a pinch of salt and pepper. Marinate the fish in this mixture for about 15-20 minutes.

  3. Heat a skillet over medium-high heat and add a drizzle of oil. Cook the fish for 2-3 minutes per side or until it is golden and cooked through.

  4. While the fish is cooking, heat the tortillas in another pan over low heat or in the microwave.

  5. Assemble the tacos: place the fish on each tortilla, add the Italian salsa, some slices of avocado, and red cabbage. If you wish, garnish with chopped coriander.

  6. Serve the fish tacos immediately with lime wedges on the side for those who want to add an extra touch of acidity.
