Fish Skewers
17/11/2023Fish skewers are a great way to enjoy different types of seafood in a single dish. Here’s a simple recipe you can make.
Ingredients
- 300 g of white-fleshed fish fillets (for example, sea bream, sea bass or cod)
- 200 g of peeled shrimp
- 2 medium squids, cleaned and cut into rings
- 1 red bell pepper
- 1 zucchini
- 1 lemon
- Extra virgin olive oil
- Salt and pepper to taste
- Aromatic herbs (such as thyme or chopped parsley)
- 8 wooden or metal skewers
Preparation
- Start by soaking the wooden skewers in water for at least 30 minutes so they do not burn during cooking.
- Cut the fish fillets into cubes of about 3 cm and season them with oil, lemon juice, salt, pepper, and aromatic herbs. Let them marinate for about 15 minutes.
- In the meantime, prepare the vegetables: wash them and cut the bell pepper and zucchini into pieces that fit the skewers, trying to keep the size similar to the pieces of fish.
- Assemble the skewers by alternating the pieces of fish with shrimp, squid rings, and pieces of vegetable.
- Heat a grill or griddle for cooking. Once it is hot, cook the skewers for about 3-4 minutes per side, until the fish and seafood are golden and cooked (cooking time may vary depending on the size and thickness of the pieces).
- During cooking, brush the skewers with the remaining marinade.
- Serve the fish skewers hot with a wedge of lemon and, if desired, a sprinkle of fresh herbs.
