Filled Chocolates

Filled chocolates are a delight that lends itself to many variations, but here I will provide you with a basic recipe for making them. Once you’ve mastered the basic techniques, you can play with the fillings and coatings.

Ingredients

For the chocolate shell:

  • 200 g of high-quality dark chocolate

For the filling (ganache):

  • 100 g of dark, milk, or white chocolate, depending on taste
  • 100 ml of fresh cream
  • 20 g of butter (optional)
  • Flavors to taste (vanilla, liqueurs, essences)

Preparation

Chocolate shell:

  1. Chop the dark chocolate finely.
  2. Melt about two-thirds of the chopped chocolate in a double boiler, being careful not to let the water touch the chocolate and not to exceed 50-55°C for dark chocolate.
  3. Remove the chocolate from the heat and add the remaining chocolate, stirring until it has melted completely. This process is called “tempering” and ensures that the chocolate sets correctly, becoming shiny and crisp.
  4. Pour a bit of the tempered chocolate into the chocolate moulds, rotating them to evenly cover all sides, then invert the moulds to let the excess chocolate drain away.
  5. Leave the chocolate shell to set.

Filling (ganache):

  1. Heat the cream until it begins to simmer.
  2. Take the cream off the heat and pour it over the chopped chocolate. Wait for one minute and then stir until the chocolate has completely melted.
  3. Add the butter and flavors, and stir until you obtain a smooth cream.
  4. Allow the ganache to cool, and then pour or spoon the cream into the solidified chocolate shell, being careful not to fill it to the brim.
  5. Seal the chocolate with an additional layer of tempered chocolate.
  6. Place the moulds in the refrigerator for at least one hour, or until the chocolate has completely hardened.

The ganache is a French preparation that has become popular worldwide. You can vary its flavor with different essences or by adding chopped dried fruit, crushed biscuits, or marshmallows to add texture and flavor.
