Ingredients
- 320g fettuccine
- 300g mixed mushrooms (such as champignon, porcini, chiodini)
- 200g burrata
- 1 clove of garlic
- Chopped fresh parsley to taste
- Extra virgin olive oil
- Salt to taste
- Freshly ground black pepper to taste
- (Optional) Dry white wine for deglazing
Preparation

Clean the mushrooms with a damp cloth or a kitchen brush, avoiding soaking them as they would absorb too much water. Slice or cut them into pieces, depending on the type and size.

Put a large pot of salted water to boil for the fettuccine.

Meanwhile, in a large pan, heat a drizzle of extra virgin olive oil and add the garlic clove. Let it brown and then remove the garlic.

Add the mushrooms to the pan, cooking on medium-high heat until they turn golden brown. At this point, if you wish, you can deglaze with a bit of white wine and let the alcohol evaporate.

Cook the fettuccine in the boiling water according to the package instructions until al dente.

Drain the fettuccine, reserving some of the cooking water, and transfer them into the pan with the mushrooms. Mix well to blend the flavors.

Add a bit of pasta cooking water to make the sauce creamier.

Serve the fettuccine with mushrooms on plates and add the burrata in the center or in pieces. Season with a pinch of salt if necessary, fresh black pepper, and chopped parsley.
