Ingredients
- 1 roll of brisée pastry (or puff pastry if you prefer)
- 200-250 g of feta
- 400-500 g of ripe tomatoes
- A few leaves of basil (or oregano if you prefer a more intense flavor)
- Salt and pepper to taste
- Extra virgin olive oil
- 1 clove of garlic (optional)
- 2 eggs (optional, for a more structured pie)
- 100 ml of cream (optional, if you’re adding eggs)
Preparation
- Preheat the oven to 180 °C.
- Roll out the brisée pastry in a previously greased or parchment-lined savory pie dish.
- Prick the bottom with a fork to prevent it from puffing up during cooking.
- Slice the tomatoes and dice or crumble the feta.
- If you opt for a richer version, in a bowl beat the eggs with the cream, salt, and pepper.
- (Optional) Finely chop the garlic clove and lightly sauté in a pan with a drizzle of oil. Add this to the egg and cream mixture, if using.
- Arrange the tomatoes and feta on the brisée pastry. If you are using eggs and cream, pour this mixture over as well.
- Scatter the hand-torn basil leaves or a pinch of dried oregano.
- Season with a drizzle of oil, and salt and pepper to taste.
- Bake for about 25-30 minutes or until the pastry is golden and the tomatoes are slightly roasted.
- Let it rest a few minutes before serving.
