Farfalle al salmone

Farfalle al Salmone is a creamy and refined dish. Here’s how to prepare it:

Ingredients

  • 350 g of farfalle (or pasta of your choice)
  • 200 g of smoked salmon, sliced
  • 200 ml of cooking cream
  • 1 small onion or shallot
  • 1 glass of white wine
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh dill (optional)
  • Juice of 1/2 lemon (optional)
  • 1 tablespoon of caper paste or cream (optional)

Preparation

  1. Start cooking the pasta in a pot with plenty of salted water, following the instructions on the package.

  2. Meanwhile, cut the smoked salmon into strips or cubes.

  3. Sauté the finely chopped onion in extra virgin olive oil until it becomes translucent.

  4. Add the salmon to the pan and cook for 1-2 minutes.

  5. Deglaze with the white wine and let the alcohol evaporate.

  6. Lower the heat and add the cooking cream, cooking for a few minutes until a creamy sauce forms.

  7. If you like, enhance the flavor with caper paste or a sprinkle of lemon juice.

  8. Drain the pasta al dente and add it to the salmon sauce in the pan, mixing gently to combine.

  9. Serve the farfalle hot, garnished with chopped fresh dill and a pinch of freshly ground black pepper.

This dish pairs wonderfully with a glass of fresh white wine, like a Pinot Grigio, which enhances its flavor. Enjoy your meal!
