Farfalle with Red Mullets and Zucchinis

Ingredients

  • 320 g of farfalle pasta
  • 4 fresh red mullets (you can ask your fishmonger to clean them for you)
  • 2 medium zucchinis
  • 1 clove of garlic
  • 200 ml of tomato puree
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by cleaning the red mullets by removing the guts and scales, then wash and cut the zucchinis into rounds or sticks, as you prefer.
  2. Heat a drizzle of extra virgin olive oil in a pan and lightly fry the crushed garlic clove until it turns golden.
  3. Add the zucchinis to the pan and cook for about 5 minutes until they start to soften. Then, add the red mullets and cook them for about 3-4 minutes per side.
  4. Once the red mullets are cooked, remove them from the pan and set them aside. In the same pan, pour in the tomato puree, adjust the salt and pepper, and let cook for about 10 minutes.
  5. Meanwhile, bring a pot of salted water to a boil and cook the farfalle following the package instructions to obtain an al dente texture.
  6. While the pasta cooks, clean and fillet the red mullets, removing the skin and bones.
