Farfalle with Fresh Salmon

Ingredients
- 320g of farfalle pasta
- 200g of fresh salmon
- 200ml of cooking cream
- 1/2 onion
- Extra virgin olive oil as needed
- Salt as needed
- Pepper as needed
- A sprig of dill (optional)
- Lemon juice (optional)
Preparation
- Put a pot of ample salted water on the heat to cook the pasta.
- In the meantime, cut the salmon into cubes of about 1-2 cm.
- Thinly slice the half onion.
- In a non-stick pan, heat a drizzle of oil and gently fry the onion until it becomes translucent.
- Add the salmon cubes to the pan and cook over medium heat until the fish changes color. Deglaze with a bit of lemon juice if you wish to enhance the flavor.
- Add the cream, a pinch of salt and pepper. Let cook over low heat for a few minutes, until you get a light cream. If you like, also add some chopped dill.
- When the water boils, cook the farfalle al dente, following the package instructions.
- Drain the pasta al dente and transfer it to the pan with the salmon and cream. Stir well to combine the ingredients.
- Serve the Farfalle with Fresh Salmon hot, adding a touch of freshly ground black pepper and, if you like, a sprinkling of fresh dill.
