Fajitas

  • Choice of toppings such as guacamole, sour cream, grated cheese
  • Fresh cilantro (in the Italian style you can use parsley if you prefer)

Preparation

  1. In a bowl, mix the lemon juice, olive oil, garlic, cumin, paprika, oregano, chili powder (if using), salt, and pepper. Add the chicken strips and make sure they are well coated with the marinade. Marinate for at least 30 minutes, or even longer if you have time.

  2. Heat a large skillet or griddle over medium-high heat. Add a drizzle of oil and then the peppers and onion. Sauté until they become tender and slightly caramelized, for about 5-8 minutes.

  3. Remove the peppers and onions from the skillet and set aside.

  4. In the same skillet, add the marinated chicken (with the marinade) and cook until it is well-browned and cooked through, about 5-7 minutes.

  5. Return the peppers and onions to the skillet with the chicken, and mix well to combine flavors.

  6. Heat the tortillas according to the package instructions.

  7. Serve the fajitas by placing the chicken and vegetable mixture in the warm tortillas, add the chosen toppings and sprinkle with chopped fresh cilantro or parsley for an Italian touch.

To transform these fajitas into an even more Italian dish, you could replace the traditional spices with aromatic herbs like rosemary and sage, and serve them with a fresh sauce made of tomatoes and basil in the style of a salsa fresca. It would be an interesting cross between two culinary worlds.
