Ingredients
- 2 heads of Belgian endive
- 100 g of soft goat cheese
- 50 g of Gorgonzola cheese
- 50 g of grated Parmesan cheese
- Chopped walnuts, to taste
- Salt and pepper, to taste
- Honey, for garnishing (optional)
Preparation
- Start by gently washing the endive leaves and pat them dry with kitchen paper to remove excess water.
- Take the cheeses and in a bowl, work them with a fork to blend and obtain a smooth cream. If the mixture is too thick, you can soften it with a spoonful of milk or cream.
- Adjust the salt and pepper to your taste.
- Add the chopped walnuts to the cheese mixture and stir to distribute evenly.
- Take the endive leaves and stuff them with the cheese cream. If you wish, you can use a piping bag to make the job easier and to give a neater appearance.
- Arrange the stuffed boats on a serving plate.
- As a final touch, you can drizzle some honey on the boats for a very pleasant sweet-salty contrast.
- Serve immediately or store in the refrigerator until serving time.
