Eggs in Tomato Sauce

Eggs in tomato sauce is a simple and tasty dish that combines the sweetness of tomatoes with the richness of eggs. Here is the recipe:

Ingredients

  • 4 eggs
  • 500 g of ripe tomatoes or a can of peeled tomatoes
  • 1 small onion
  • 2 cloves of garlic
  • 1 bunch of fresh basil
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Start by chopping the onion and garlic and sautéing them in a pan with a drizzle of extra virgin olive oil until they become translucent.
  2. Add the chopped tomatoes, or peeled tomatoes, salt and pepper, and let them cook over medium heat for about 15-20 minutes until the sauce reduces and thickens.
  3. Once the sauce is ready, make small wells and crack an egg into each one. Cover the pan and let the eggs cook in the tomato sauce for another 4-5 minutes or until they reach the desired doneness.
  4. Garnish with hand-torn fresh basil and serve hot.
