Eggs in Tomato Sauce
17/11/2023Eggs in tomato sauce is a simple and tasty dish that combines the sweetness of tomatoes with the richness of eggs. Here is the recipe:
Ingredients
- 4 eggs
- 500 g of ripe tomatoes or a can of peeled tomatoes
- 1 small onion
- 2 cloves of garlic
- 1 bunch of fresh basil
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- Start by chopping the onion and garlic and sautéing them in a pan with a drizzle of extra virgin olive oil until they become translucent.
- Add the chopped tomatoes, or peeled tomatoes, salt and pepper, and let them cook over medium heat for about 15-20 minutes until the sauce reduces and thickens.
- Once the sauce is ready, make small wells and crack an egg into each one. Cover the pan and let the eggs cook in the tomato sauce for another 4-5 minutes or until they reach the desired doneness.
- Garnish with hand-torn fresh basil and serve hot.
