Sunny-side up eggs

Sunny-side up eggs are a classic Italian dish, simple and quintessential, perfect for a rich breakfast or a quick meal. Here’s how to prepare them:

Ingredients

  • 2 fresh eggs (or more, depending on how many people you need to serve)
  • 1 tablespoon of butter or extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste (optional)
  • Any other ingredients of your liking such as cheese, aromatic herbs, or tomato.

Preparation

  1. Heat the butter or oil in a pan over medium-low heat. If you prefer an extra touch of flavor, you can also use a knob of butter.
  2. When the fat is hot (but be careful not to burn it), gently crack the eggs and pour them into the pan, taking care to keep the yolk intact.
  3. Cook the eggs uncovered for about 2-3 minutes or until the whites have turned white and the yolk has reached the desired level of doneness. For a more cooked yolk, you can extend the cooking time or cover the pan for a few moments.
  4. Season with salt and pepper to taste.
  5. Use a spatula to gently lift the eggs and transfer them to a plate.

You can personalize your sunny-side up eggs by adding fresh aromatic herbs like parsley or thyme on top, or grated cheese such as Parmesan for an Italian touch, or even tomato slices or sautéed spinach for a vegetable intake.
