Eggs and Peas

Ingredients
- 4 eggs
- 300 g of fresh or frozen peas
- 1 small onion
- 50 g of diced pancetta (optional)
- 3 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- A sprig of chopped parsley (optional)
Preparation
- In a sufficiently large pan, heat the extra virgin olive oil and add the finely chopped onion. Sauté until the onion becomes translucent.
- If you want to add an extra touch of flavor, you can add diced pancetta, letting it sauté with the onion until it becomes crispy.
- Add the peas, mix well, and cover with a lid, letting it cook on medium heat for about 10 minutes (adding a little water if using fresh peas).
- When the peas are almost done, season with salt and pepper to your taste.
- Crack the eggs and add them directly to the pan with the peas, trying not to break the yolks. If you prefer, you can lightly beat the eggs before pouring them into the pan.
- Let it cook until the egg whites are set and the yolks are cooked to your liking. For a softer yolk, cover with a lid for a few minutes.
- If desired, sprinkle with grated Parmesan cheese and chopped parsley before serving.
