Ingredients

  • 2 medium eggplants
  • 150 g of flour
  • 2 eggs
  • 100 ml of milk
  • 100 g of grated cheese, such as Parmesan or Pecorino (depending on preference)

  • 1 clove of garlic (optional)

Preparation

  1. Start by washing and drying the eggplants, then cut them into medium-sized cubes. If you wish, you can leave the skin on or peel it according to personal taste.
  2. In a large bowl, beat the eggs with a pinch of salt and pepper. Add the milk and mix well.
  3. Gradually incorporate the flour into the egg and milk mixture, stirring continuously to avoid lumps.
  4. Add the grated cheese and, if you like, a finely chopped clove of garlic to add an aromatic touch.
  5. Fold the eggplant cubes into the batter, ensuring they are completely coated.
  6. Heat a generous amount of oil in a frying pan and, once the temperature is right for frying, use a spoon to scoop portions of the batter, sliding them gently into the hot oil.
  7. Fry the fritters until they become golden on all sides, then place them on paper towels to remove excess oil.
  8. Serve the fritters hot, garnished with fresh basil leaves if desired.
