Egg-free Chocolate Salami

Ingredients

  • 200 g of dry biscuits
  • 150 g of dark chocolate
  • 50 g of vegan butter or margarine
  • 100 g of powdered sugar
  • 50 g of unsweetened cocoa powder
  • 60-100 ml of plant-based milk (depending on the desired consistency)
  • Grated orange zest (optional)
  • Chopped dried fruit (nuts, hazelnuts, almonds, etc.) (optional)

Preparation

  1. Chop the biscuits into not too small pieces, to maintain the “grainy” texture of the salami.
  2. Melt the dark chocolate in a double boiler or in the microwave, making sure to stir occasionally to prevent burning.
  3. Add the vegan butter to the melted chocolate and mix until it is completely dissolved.
  4. In a separate bowl, combine powdered sugar and cocoa powder, then add the chocolate and butter mixture. Mix well to get a smooth mixture.
  5. Stir in the chopped cookies, grated orange zest, and dried fruit, if you decide to use them.
  6. Gradually add the plant-based milk until the mixture reaches a moldable consistency, but not too liquid.
  7. Pour the mixture onto a sheet of parchment paper and shape it into a cylinder, wrapping it well.
  8. Place the chocolate salami in the refrigerator for at least 3-4 hours, better if overnight, until it has firmed up.
  9. Before serving, dust with a little powdered sugar or cocoa powder to simulate the “mold” of the salami.
