Easter Meringue with strawberries and chocolate

I can guide you in preparing a delicious Easter Meringue with strawberries and chocolate. It is a fresh and indulgent dessert that will surely amaze your guests during the Easter holidays. Follow the ingredient list and the procedure carefully.

Ingredients

For the meringue:

  • 4 room temperature egg whites
  • 220 g of granulated sugar
  • 1 teaspoon of white wine vinegar
  • 1 teaspoon of cornstarch
  • 1 teaspoon of vanilla extract

For the filling and decoration:

  • 500 ml of fresh cream for whipping
  • 3 tablespoons of powdered sugar
  • 300 g of fresh strawberries
  • 100 g of dark chocolate

Preparation

  1. Prepare the meringue: preheat the oven to 120°C. In a clean, wide bowl, whip the egg whites with an electric beater until frothy. Add sugar a little at a time, continuing to whip until you get a shiny and firm meringue.

  2. Add the white wine vinegar, cornstarch, and vanilla extract, and gently fold in with a spatula to incorporate the ingredients without deflating the mixture.

  3. On a baking tray lined with parchment paper, form a meringue disc about 20-22 cm in diameter. Use the spatula to create a slightly higher edge around the disc, making a “nest” that will hold the whipped cream and strawberries.

  4. Bake in the oven at 120°C for about 1 hour and 30 minutes or until the meringue becomes crisp on the outside. Turn off the oven and let the meringue cool inside with the door slightly ajar to prevent humidity.

  5. In the meantime, wash and cut the strawberries (leaving some whole for decoration). Whip the fresh cream with the powdered sugar until it is firm and fluffy.

  6. Melt the chocolate in a double boiler or in the microwave, being careful not to burn it. Let it cool down slightly.

  7. When the meringue is completely cooled, remove it from the oven and carefully place it on a serving dish.

  8. Spread the whipped cream over the meringue, creating an even layer. Arrange the cut strawberries on top of the cream and decorate with whole strawberries.

  9. Finally, drizzle the melted chocolate over the meringue, creating thin threads for a decorative effect.

  10. Place the meringue in the refrigerator for at least one hour before serving to let the flavors rest and blend together.

Curiosity

The meringue is a versatile dessert that can be personalized with different types of fruit or chocolate to taste. In Italy, it is common to enrich meringues with whipped cream and seasonal fruit, which in spring often coincides with strawberries, creating a sweet and tangy combination that always wins over the palate.
