Dulce de leche Cookies

I can provide you with the recipe for dulce de leche cookies. These treats are perfect for an afternoon tea or as a dessert accompanied by a good coffee. Here’s what you need to prepare them:

Ingredients

  • 250 g of all-purpose flour
  • 150 g of butter at room temperature
  • 100 g of icing sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • Dulce de leche as needed for stuffing
  • Icing sugar for dusting (optional)

Preparation

  1. In a large bowl, cream the soft butter with the icing sugar until you have a smooth and homogeneous mixture.
  2. Add the egg and vanilla extract, continuing to mix.
  3. Incorporate the sifted flour and the pinch of salt, blend the ingredients until a compact dough is formed.
  4. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  5. After resting, preheat the oven to 180°C.
  6. Roll out the dough on a slightly floured surface to a thickness of about 5 mm.
  7. Use a round cookie cutter to cut out the cookies from the dough and place them on a baking sheet lined with parchment paper.
  8. Bake in the oven for 10-12 minutes or until the edges begin to turn slightly golden.
  9. Remove the cookies from the oven and let them cool completely on a wire rack.
  10. Once cooled, spread some dulce de leche on one cookie and cover it with another cookie, creating a sort of “sandwich”.
  11. If desired, you can dust the cookies with icing sugar before serving.

For an Italian twist, you might want to add a bit of liqueur to the dough, such as Amaretto or Limoncello, to give the cookies an extra distinctive note.

Curiosity

Dulce de leche is a sweet caramel-colored cream typical of Latin America, in particular countries like Argentina and Uruguay. Although its use is very widespread in these cultures, it has also found wide application in Italian pastry, especially for its resemblance to our caramel cream.
