Duffin

The “Duffin” is a sort of hybrid between a muffin and a doughnut, a delicacy that combines the softness of a muffin with the characteristic sweet and sugared flavor of a doughnut. Here’s how to make them:

Ingredients

  • 140 g of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • A pinch of salt
  • 1 large egg
  • 65 g of brown sugar
  • 120 ml of milk
  • 1 teaspoon of vanilla extract
  • 40 ml of vegetable oil or melted butter
  • Granulated sugar and ground cinnamon for coating
  • Jam of your choice or Nutella, for filling (optional)

Preparation

  1. Preheat the oven to 180 °C (356 °F) and prepare a muffin tin by greasing it or using paper liners.

  2. In a bowl, sift together the flour, baking powder, baking soda, and salt.

  3. In another bowl, whisk the egg with the brown sugar until the mixture is fluffy.

  4. Add the milk, vanilla extract, and vegetable oil (or melted butter) to the wet ingredients and mix well.

  5. Combine the dry ingredients with the liquid mixture and mix gently until just combined. Avoid overmixing to prevent the Duffins from becoming too hard.

  6. Pour the batter into the muffin molds, filling them about three-quarters full.

  7. If you wish to fill them, you can add a teaspoon of jam or Nutella to the center of each muffin before baking.

  8. Bake in the oven for 15-20 minutes or until a toothpick inserted into the center of a Duffin comes out clean.

  9. While the Duffins are still warm, roll them in granulated sugar mixed with some cinnamon, to create that characteristic sweet and aromatic crust.

  10. Allow them to cool on a wire rack before serving.

Curiosity

The creation of Duffins is attributed to Bea Vo, an American pastry chef who, while working in London, conceived them in 2011. This treat quickly spread and became a trend in many bakeries and coffee shops around the world. Duffins are perfect for an afternoon tea or as a sweet snack.
