Duchess Potato Casserole with Sausage

Ingredients

  • 1 kg of potatoes
  • 100 g of butter
  • 2 egg yolks
  • Salt and pepper to taste
  • Grated nutmeg to taste
  • 400 g of pork sausage
  • 100 g of grated Parmesan cheese
  • 1 tablespoon of extra virgin olive oil
  • 200 ml of cooking cream

Preparation

  1. Start by peeling the potatoes and boiling them in salted water until they are soft.
  2. Meanwhile, in a pan, heat a tablespoon of oil and sauté the previously crumbled or chopped sausage until it becomes well browned. Set aside.
  3. Once the potatoes are ready, drain them and mash them with a potato masher or a food mill until smooth.
  4. Add the soft butter, egg yolks, a generous dash of nutmeg, salt, and pepper to the mashed potatoes. Mix well to blend all the ingredients.
  5. Preheat the oven to 200°C.
  6. Grease a baking dish with a bit of butter and sprinkle with some Parmesan cheese.
  7. Spread about half of the mashed potatoes in the baking dish, creating an even layer.
  8. Lay the browned sausage over the mashed potatoes and then pour the cooking cream.
  9. Cover with the remaining mashed potatoes, smoothing the surface. If you wish, you can use a piping bag with a star nozzle to give a more decorative effect to the potatoes.
  10. Sprinkle with the remaining Parmesan cheese and a few flakes of butter.
  11. Place the casserole in the preheated oven and cook for about 20-25 minutes, or until the surface is golden brown and crispy.

Serve hot, perhaps accompanied by a good green salad to balance the richness of the dish.
