Duchess Potato Casserole with Sausage

Ingredients
- 1 kg of potatoes
- 100 g of butter
- 2 egg yolks
- Salt and pepper to taste
- Grated nutmeg to taste
- 400 g of pork sausage
- 100 g of grated Parmesan cheese
- 1 tablespoon of extra virgin olive oil
- 200 ml of cooking cream
Preparation
- Start by peeling the potatoes and boiling them in salted water until they are soft.
- Meanwhile, in a pan, heat a tablespoon of oil and sauté the previously crumbled or chopped sausage until it becomes well browned. Set aside.
- Once the potatoes are ready, drain them and mash them with a potato masher or a food mill until smooth.
- Add the soft butter, egg yolks, a generous dash of nutmeg, salt, and pepper to the mashed potatoes. Mix well to blend all the ingredients.
- Preheat the oven to 200°C.
- Grease a baking dish with a bit of butter and sprinkle with some Parmesan cheese.
- Spread about half of the mashed potatoes in the baking dish, creating an even layer.
- Lay the browned sausage over the mashed potatoes and then pour the cooking cream.
- Cover with the remaining mashed potatoes, smoothing the surface. If you wish, you can use a piping bag with a star nozzle to give a more decorative effect to the potatoes.
- Sprinkle with the remaining Parmesan cheese and a few flakes of butter.
- Place the casserole in the preheated oven and cook for about 20-25 minutes, or until the surface is golden brown and crispy.
Serve hot, perhaps accompanied by a good green salad to balance the richness of the dish.
