Spaghetti ubriachi
17/11/2023Drunken spaghetti, also known as “spaghetti all’ubriaco” or “drunken spaghetti,” is a simple and tasty dish that involves cooking the pasta in a mix of water and red wine, giving the spaghetti a unique purple color and a rich flavor.
Here is an Italian version of the recipe:
Ingredients
- 400g of spaghetti
- 750ml of good quality red wine
- 2 cloves of garlic
- Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- Chopped fresh parsley (optional)
- Chili pepper (optional)
- Grated Parmesan cheese (optional)
Preparation
- In a large pan, sauté the garlic cloves in extra virgin olive oil until golden brown. If desired, add the chili pepper as well.
- Meanwhile, bring a mix of water and red wine to a boil in a large pot. When boiling, add a pinch of salt.
- Add the spaghetti to the pot and cook according to the time indicated on the package, stirring occasionally.
- Drain the pasta al dente, keeping some of the cooking water, and transfer it to the pan with the garlic (and chili pepper if used).
- Sauté the spaghetti in the pan for a few minutes to flavor them, adding some of the cooking water if necessary to make it creamy.
- Serve immediately, sprinkling with freshly ground black pepper, chopped parsley, and, if liked, grated Parmesan cheese.
