Drip cake

It’s a recipe that lends itself to multiple customizations, but I will provide you with a basic version that you can then adapt according to your taste.

Ingredients for the cake base:

  • 250 g of all-purpose flour
  • 250 g of granulated sugar
  • 4 large eggs
  • 110 g of melted butter
  • 140 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • Vanilla essence (or grated lemon zest)

Ingredients for the buttercream:

  • 200 g of butter at room temperature
  • 400 g of powdered sugar
  • 2 tablespoons of milk or fresh cream
  • Food coloring (optional)

Ingredients for the chocolate ganache (for the “drip”):

  • 100 g of dark or milk chocolate
  • 100 ml of fresh cream

Preparation

  1. Start with the cake base: preheat the oven to 180 °C. In a bowl, beat the eggs with the sugar until you get a light and fluffy mixture.
  2. Add the cooled melted butter and vanilla (or lemon zest), mixing gently.
  3. Fold in the sifted flour with the baking powder and salt, alternating with the milk, until you get a smooth and homogeneous mixture.
  4. Pour the mixture into one or more pans (if you want to make multiple layers) previously buttered and floured, then bake for about 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  5. Once baked, let the cake cool completely before proceeding with the decoration.
  6. Meanwhile, prepare the buttercream: work the butter with the powdered sugar added little by little and the milk, until you obtain a smooth cream. If you wish to color the cream, add the dye at this point.
  7. Level the cake bases if necessary and begin to fill and cover the cake with the buttercream, creating an even layer on the surfaces and sides.
  8. Put the cake in the fridge for at least 30 minutes so that the cream hardens.
  9. Prepare the ganache for the drip: melt the chopped chocolate with the cream in a double boiler, stirring until you get a smooth and homogeneous mixture. Let it cool until it reaches a consistency suitable for creating the drip on the cake.
  10. Remove the cake from the fridge and, using a spoon or a pastry syringe, create the ganache drips along the edges, letting them fall casually on the sides. Then pour the rest of the ganache on the surface of the cake, leveling it with a spatula.
  11. Put the cake back in the fridge to set the decoration.

At this point, your Drip Cake will be ready to be further decorated with tufts of buttercream, macarons, candies, edible flowers, or any other themed decoration you prefer.
