Double Chocolate Mousse Cake

Ingredients

  • For the base:
    • 200 g of dry biscuits (like Digestive)
    • 100 g of melted butter
  • For the dark chocolate mousse:
    • 200 g of dark chocolate (at least 70% cocoa)
    • 3 eggs, with yolks and whites separated
    • 50 g of sugar
    • 250 ml of fresh cream for whipping
  • For the white chocolate mousse:
    • 200 g of white chocolate
    • 2 eggs, with yolks and whites separated
    • 40 g of sugar
    • 200 ml of fresh cream for whipping

Preparation

  1. Start by preparing the base by crushing the biscuits in a mixer until you get a fine sand-like consistency. Mix the crushed biscuits with the melted butter until you get a homogeneous mixture.
  2. Line the bottom of a springform pan with parchment paper. Pour the biscuit and butter mixture onto the base, pressing well with the back of a spoon to compact it. Put in the refrigerator to firm up.
  3. For the dark chocolate mousse, melt the chocolate in a double boiler or microwave and let it cool down. Whip the yolks with half of the sugar until you get a frothy mixture, then incorporate the melted chocolate.
  4. In another bowl, whip the whites into firm peaks with the remaining sugar. Gently fold them into the chocolate and yolk mixture.
  5. Whip the cream, being careful not to deflate it, and fold it into the chocolate mixture, mixing from top to bottom.
  6. Pour the mousse over the biscuit base in the pan and let it cool in the fridge for at least 1-2 hours.
  7. For the white chocolate mousse, repeat the process similar to that of the dark chocolate. Be careful, white chocolate is more delicate and might require less time to melt.
  8. When the dark chocolate mousse has set, add the white chocolate mousse on top and level it with a spatula.
  9. Put the cake in the fridge for at least another 3-4 hours, better if overnight.

To serve, you might add chocolate curls or a dusting of cocoa powder to decorate your double chocolate mousse cake.
