Dorayaki

Dorayaki are Japanese desserts typically made of two soft pancakes with a filling of Anko, a sweet red bean paste. Here’s how you can prepare dorayaki with an Italian twist.

Ingredients

  • 2 eggs
  • 100 g of sugar
  • 1 tablespoon of honey
  • 160 g of type 00 flour
  • 1 teaspoon of baking powder
  • 120 ml of water
  • Anko (red bean paste) for the filling
  • (Optional) Lemon or orange zest for an additional Italian aroma

Preparation

  1. In a bowl, beat the eggs with the sugar until the mixture is foamy.
  2. Add the honey and, if you like, the lemon or orange zest to add an Italian citrusy twist.
  3. In another bowl, sift together the flour and baking powder.
  4. Incorporate the flour mixture into the egg mixture, alternating with the water, until you get a smooth and homogeneous batter.
  5. Heat a non-stick pan and pour a small ladle of batter to form a disc about 10 cm in diameter.
  6. Cook the pancake for about 2 minutes per side, until golden brown.
  7. Once all the pancakes are cooked, let them cool.
  8. Spread a pancake with anko paste and cover with another pancake, pressing lightly.

Curiosity

Dorayaki became famous outside of Japan thanks to the character from the manga and anime Doraemon, who is particularly fond of them. It’s a classic snack often enjoyed during Hanami, which is the contemplation of cherry blossoms.
