Coconut Delights

Here is the recipe for making delicious coconut treats, which are simple and enjoyable, perfect to accompany tea or coffee.

Ingredients

  • 250 g of shredded coconut
  • 200 g of sugar
  • 3 egg whites
  • A pinch of salt
  • Optional: grated zest of a lemon for a citrus touch

Preparation

  1. Preheat the oven to 170 °C and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded coconut and sugar.
  3. Separate the egg whites from the yolks and whip the egg whites to firm peaks with a pinch of salt.
  4. Gently fold the whipped egg whites into the coconut and sugar mixture, trying to maintain as much air in the mixture as possible. If you wish, you can also add the grated lemon zest at this step.
  5. Using two teaspoons or with damp hands, form small balls or mounds of the mixture and place them on the prepared baking sheet, leaving some space between each.
  6. Bake in the oven for about 15-20 minutes or until the edges begin to brown.
  7. Remove from the oven and let the coconut delights cool completely on the baking sheet before serving.
