  • 100 g of sugar
  • 100 g of soft butter
  • 2 eggs
  • 50 g of wildflower honey
  • 2 teaspoons of baking powder for sweets
  • A pinch of salt

For the frosting:

  • 250 g of spreadable cheese (like Philadelphia)
  • 50 g of honey
  • Icing sugar to taste (optional, to adjust the consistency)

Decoration:

  • Chopped walnuts or almonds
  • Drizzle of honey

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, cream the soft butter with the sugar until you get a frothy mixture.
  3. Add the eggs, one at a time, incorporating them well into the mixture.
  4. Mix the honey into the mixture of butter, sugar, and eggs.
  5. Sift the flour, baking powder, and a pinch of salt together in a separate bowl.
  6. Combine the dry ingredients with the wet mixture, stirring gently until you have a uniform batter.
  7. Pour the batter into cupcake liners, filling them about 2/3 full.
  8. Bake in the oven for about 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Remove the cupcakes from the oven and let them cool completely on a wire rack.

Frosting preparation:

  1. In a bowl, beat the spreadable cheese with the honey until you get a smooth and homogeneous cream. If necessary, add icing sugar to achieve the desired consistency.
  2. Once the cupcakes are cooled, decorate with the frosting using a piping bag or by spreading with a spatula.

Final decoration:

  1. Sprinkle chopped nuts or almonds on the surface of the cupcakes for added crunchiness.
  2. With a spoon, drizzle honey over each cupcake for an extra touch of shine and flavor.

Curiosity

Honey was one of the first sweeteners used by humans and is still highly valued not only for its unique flavor but also for its properties. Each type of honey has different notes that can give your cupcakes various nuances, so don’t hesitate to experiment with different honeys such as acacia, chestnut, or dandelion.
