Ingredients

  • 300 g of all-purpose flour
  • 150 g of sugar
  • 3 eggs
  • 125 g of soft butter
  • 1 sachet of baking powder
  • Grated zest of 1 lemon
  • A pinch of salt
  • 120 ml of milk
  • 1 teaspoon of vanilla extract
  • Icing sugar (for decoration)

For the custard cream, if you wish to fill the cake:

  • 500 ml of milk
  • 4 egg yolks
  • 100 g of sugar
  • 40 g of all-purpose flour
  • Zest of 1 lemon

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. In a bowl, beat the eggs with the sugar until the mixture is light and fluffy.
  3. Add the soft butter and continue mixing.
  4. Stir in the grated lemon zest and vanilla extract.
  5. In another bowl, mix the flour, baking powder, and salt.
  6. Combine the dry ingredients with the egg and butter mixture, alternating with the milk, until a uniform batter is obtained.
  7. Pour the batter into a well-buttered or parchment paper-lined daisy-shaped cake tin.
  8. Bake for about 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Allow the cake to cool before unmolding.
  10. If you want to fill the cake with custard cream, make it by heating the milk with the lemon zest. Beat the egg yolks with the sugar, then add the flour and finally the hot milk. Cook until the cream thickens, stirring. Allow to cool before using.
  11. Cut the cake horizontally, fill with custard cream, then reassemble.
  12. Dust the surface of the cake with icing sugar to finish.

If you prefer not to use custard cream, the Daisy Flower Cake can also be enjoyed simply dusted with icing sugar or enriched with a lemon glaze.
