Ham Crepes without Dairy
17/11/2023I can provide you with the recipe for lactose-free ham crepes. In the traditional version, ingredients containing lactose such as milk and cheese are used, but we will replace them with dairy-free alternatives.
Ingredients
- 100 g of wheat flour
- 2 eggs
- 250 ml of soy or almond milk (unsweetened)
- Salt to taste
- 100 g of thinly sliced cooked ham
- Olive oil or vegan butter for greasing the pan
For the lactose-free bechamel sauce:
- 500 ml of soy or almond milk (unsweetened)
- 40 g of wheat flour
- 40 g of margarine or vegan butter
- Salt and nutmeg to taste
Preparation
- In a bowl, mix the flour and eggs. Gradually add the vegetable milk, stirring constantly to avoid lumps. Add a pinch of salt.
- Lightly oil a non-stick pan with a bit of oil or vegan butter and heat it. Pour a ladle of batter and tilt the pan to distribute the mixture evenly.
- Cook the crepe until the edges start to come away, then flip it and cook the other side. Repeat with the remaining batter. Set aside the crepes.
- For the lactose-free bechamel, melt the margarine in a saucepan. Add the flour and cook for a few minutes, stirring to create a roux.
- Gradually pour the vegetable milk, continuing to stir to avoid lumps. Cook until the bechamel sauce thickens. Season with salt and nutmeg.
- Place a slice of ham on each crepe, then roll up or fold like a wallet.
- Pour some of the lactose-free bechamel into a baking dish, lay the filled crepes and cover with the rest of the bechamel.
- If desired, you can add some grated vegan cheese on top.
- Bake in a pre-heated oven at 180 °C for about 15-20 minutes until the surface is slightly golden.

Crepes, also known as “crêpes” in French cuisine, are very versatile and can be prepared with various types of fillings. The lactose-free bechamel sauce, on the other hand, is an excellent alternative for those following a dairy-free diet but do not want to give up the creaminess of this classic dressing.
