Cutlet Rolls

Ingredients
- 4 thin veal cutlets
- 4 slices of cooked ham
- 4 slices of cheese (taleggio, fontina, scamorza, or another cheese that melts well)
- Flour, as needed for dusting
- 2 eggs
- Breadcrumbs, as needed for breading
- Salt and pepper, to taste
- Olive oil or butter, for cooking
- Sage leaves (optional)
Preparation
- Flatten the cutlets with a meat mallet until they have an even thickness.
- Season the cutlets with salt and pepper on both sides.
- On top of the cutlets, lay out a slice of ham and then a slice of cheese, leaving a free edge to facilitate sealing.
- Roll up the cutlets on themselves, starting from the shorter side, to form the rolls. Secure the rolls with toothpicks or kitchen twine.
- Dredge the rolls first in flour (shaking off the excess), then dip in beaten egg, and finally in breadcrumbs, making sure they are well covered on all sides.
- In a skillet, heat the olive oil or butter well and cook the rolls until golden brown, turning them to cook evenly on all sides. If desired, you can add some sage leaves to the oil for additional flavoring.
- Once cooked, remove the toothpicks or cut the twine before serving.
Variations:
If you prefer, you can also bake the cutlet rolls in the oven at 180 °C (approximately 350 °F) for about 20 minutes, turning halfway through cooking, until they are golden and crispy.

To accompany the cutlet rolls, you could serve a side of grilled vegetables or a fresh green salad.
