Tagliata with sweet and sour onions

The tagliata with sweet and sour onions is a delicious and relatively simple dish to prepare. Here are the ingredients and the procedure for making this dish.

Ingredients

  • 300 g of beef sirloin (or tagliata)
  • Extra virgin olive oil
  • Coarse salt
  • Black pepper
  • Fresh rosemary sprigs (optional)
  • 2 Tropea red onions
  • 2 tablespoons of brown sugar
  • 4 tablespoons of balsamic vinegar from Modena
  • Fine salt

Preparation

  1. Start with the beef tagliata:

    • Take the meat out of the fridge at least 30 minutes before cooking to bring it to room temperature.
    • Heat a pan or grill over high heat. Once it’s hot, place the meat on it without adding any fats. If desired, you can place some rosemary sprigs on the meat while it cooks to further flavor it.
    • Cook the meat for 3-4 minutes per side, depending on thickness and desired degree of doneness. Season with salt and pepper on the top side while the bottom side cooks.
    • Once cooked, transfer the meat to a cutting board and let it rest for a moment, covering it with a piece of aluminum foil, to allow the juices to redistribute.
  2. While the meat is resting, prepare the sweet and sour onions:

    • Clean and slice the onions. Put a pan on the fire with a drizzle of oil and add the onions.
    • Let them wilt over medium heat for about 10 minutes, then add the brown sugar and allow them to caramelize slightly.
    • Once the onions have colored, add the balsamic vinegar and a pinch of salt.
    • Continue to cook on low heat until the onions become soft and the vinegar has reduced slightly, taking on a syrupy consistency.
  3. Now you can compose the dish:

    • Slice the meat into diagonally cut strips about 5 mm thick and arrange them on the serving plate.
    • Place the sweet and sour onions and their cooking juices on top of the meat.
    • If you wish, add an extra fresh grind of black pepper and a drizzle of extra virgin olive oil.

Serve the tagliata with sweet and sour onions immediately, accompanied, if you like, with grilled vegetables or a fresh salad.
