Beef Tagliata with Aromatic Herbs

Ingredients

  • 400 g of beef tagliata (preferably sirloin)
  • Coarse salt and black pepper to taste

Preparation

  1. Take the meat and let it come to room temperature for about 15-20 minutes before starting to cook.

  3. Heat a cast-iron skillet or grill to high temperature.
  4. Massage the meat with a drizzle of extra virgin olive oil and the crushed garlic clove (which you will remove before cooking the meat).
  5. When the skillet is very hot, place the meat and let it cook for about 3-4 minutes per side (depending on the thickness and desired degree of doneness).
  6. While the meat is cooking, season it with coarse salt and freshly ground black pepper.
  7. Once the desired doneness is reached, remove the meat from the skillet and let it rest for a couple of minutes so that the juices redistribute inside.
  8. Slice the tagliata into slices about half a centimeter thick.
  9. Arrange the slices on a serving dish and sprinkle them with the chopped mix of aromatic herbs and a few drops of lemon juice.
  10. Dress with a raw drizzle of extra virgin olive oil and serve immediately.
