Curry Rice Croquettes

Ingredients

  • 300 g of Arborio or Carnaroli rice (typical for risotto)
  • 1 small onion
  • 1 clove of garlic
  • 2 tablespoons of extra virgin olive oil
  • 1 liter of vegetable broth
  • 2 teaspoons of curry powder
  • 100 g of grated cheese (Parmesan or Pecorino)
  • 2 eggs
  • Breadcrumbs as needed
  • Salt as needed
  • Pepper as needed
  • Oil for frying

Preparation

  1. In a large frying pan, sauté the finely chopped onion and garlic in extra virgin olive oil until they become translucent.
  2. Add the rice and toast for a few minutes, stirring constantly.
  3. Mix in the curry powder and stir well.
  4. Add the vegetable broth, a little at a time, allowing the rice to absorb the liquid before adding more, just like when making risotto.
  5. Once the rice is cooked (after about 18-20 minutes), turn off the heat and add the grated cheese. Stir until it is well incorporated.
  6. Allow the rice to cool, then adjust with salt and pepper.
  7. Beat the eggs in a bowl and prepare another bowl with breadcrumbs.
  8. Form the croquettes with the now cool rice, dip them first into the beaten egg and then into the breadcrumbs.
  9. Heat a generous amount of oil in a frying pan and fry the croquettes until they are golden and crispy on all sides.
  10. Drain on paper towels to remove excess oil.

Serve the curry rice croquettes hot, paired with a yogurt sauce or a fresh tomato sauce for an Italian twist.
