Curry Rice

Ingredients
- 1 cup of rice
- 2 cups of water or vegetable broth
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 1 clove of garlic, chopped
- 1 red bell pepper, diced
- 1 carrot, diced
- 2 tablespoons of curry powder
- Salt and pepper, to taste
- Fresh aromatic herbs (cilantro, parsley or basil), chopped to taste (optional)
- Toasted nuts such as almonds or cashews for garnish (optional)
Preparation
- In a large pan or saucepan, heat the olive oil over medium heat and sauté the onion and garlic until they become translucent.
- Add the bell pepper and carrot, and continue to sauté until the vegetables begin to soften.
- Add the curry powder and toast the spices for a minute to enhance their aromas.
- Pour the rice into the pan and stir well to ensure the grains are flavored with the spice mix.
- Add the water or vegetable broth and bring to a boil. Adjust salt and pepper.
- Reduce the heat, cover with a lid, and let it cook for about 18 minutes, or until the rice has absorbed all the liquid and is soft.
- If desired, garnish the curry rice with fresh aromatic herbs and toasted nuts before serving.
As an Italian touch, you can use homemade broth and add a drizzle of raw extra virgin olive oil to the finished dish for more depth of flavor.
For a touch of uniqueness, you can enrich the dish with typical Italian ingredients such as diced zucchini, sun-dried tomatoes, or olives, which will add a pleasant Mediterranean note to the curry.
