Chicken Curry, Speck, and Vegetables

Chicken Curry with speck and vegetables is a creative variant that combines flavors of Indian cuisine with an all-Italian touch provided by the smoked and flavorful speck. Here’s how to prepare the dish:

Ingredients

  • 400 g of chicken breast
  • 100 g of sliced speck
  • 1 medium onion
  • 1 zucchini
  • 1 red pepper
  • 1 carrot
  • 2 tablespoons of curry paste (red or yellow, depending on preference)
  • 200 ml of coconut milk
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Fresh coriander (optional)

Preparation

  1. Cut the chicken breast into bite-size pieces and set aside.
  2. Cut the speck into strips and saute in a large non-stick skillet until it becomes crispy. Remove it and set it aside.
  3. In the same skillet, add a drizzle of olive oil and sauté the chopped onion until it becomes transparent.
  4. Add the chicken and brown over medium-high heat until it’s golden on all sides.
  5. Cut the zucchini, red pepper, and carrot into pieces and add them to the skillet. Sauté the vegetables for a few minutes.
  6. Sprinkle the chicken and vegetables with the curry paste, mixing well to distribute the seasoning. Cook for a few minutes until the spices are well released.
  7. Pour in the coconut milk, reduce the heat and let it simmer for about 15-20 minutes until the sauce begins to thicken.
  8. Season with salt and pepper.
  9. Add the previously cooked speck to the rest of the ingredients in the pan and mix gently.
  10. If you wish, garnish with chopped fresh coriander before serving.
