Chicken Curry Meatballs

Ingredients

  • 500 g of ground chicken breast
  • 1 egg
  • 2 tablespoons of bread crumbs
  • 2 tablespoons of milk
  • 2 tablespoons of curry powder
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • Extra virgin olive oil for frying
  • A bunch of fresh parsley, finely chopped (Italian addition)
  • 30 g of grated Parmesan cheese (Italian addition)
  • 1 green apple, peeled and grated (to sweeten and balance the curry flavor)

Preparation

  1. In a large bowl, combine the ground chicken, egg, bread crumbs soaked in milk, curry powder, minced garlic, salt, pepper, chopped parsley, grated Parmesan cheese, and grated apple.
  2. Mix all the ingredients well until you have a homogeneous mixture.
  3. With moistened hands, form meatballs the size of a walnut and slightly flatten them.
  4. Heat a stream of extra virgin olive oil in a frying pan and when it’s hot, place the meatballs in it.
  5. Cook the meatballs over medium heat, turning them occasionally, until they are golden brown and evenly cooked, for about 8-10 minutes.
  6. Drain the meatballs on paper towels to remove excess oil.
