Cupcake

I can share with you an Italian-style cupcake recipe, with a touch of creativity! Here’s a basic recipe for Italian-inspired cupcakes:

Ingredients

  • 150 g of flour
  • 125 g of sugar
  • 125 g of butter at room temperature
  • 2 large eggs
  • 60 ml of milk
  • 1/2 packet of baking powder
  • 1 pinch of salt
  • Flavoring of choice (vanilla, lemon, or orange)

For the frosting:

  • 250 g of mascarpone
  • 100 g of icing sugar
  • Flavoring of choice (vanilla, lemon, or orange)

Preparation

  1. Preheat the oven to 180 °C and place paper liners in a muffin tin.
  2. In a bowl, cream the soft butter with the sugar until the mixture is light and fluffy.
  3. Add the eggs one at a time, continuing to beat.
  4. In another bowl, sift the flour with the baking powder and salt.
  5. Fold the dry ingredients into the butter and egg mixture, alternating with the milk. Add the chosen flavoring and mix until you have a smooth batter.
  6. Fill the liners two-thirds full with the batter and bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cupcakes cool completely before decorating them.

For the frosting:

  1. In a bowl, beat the mascarpone with the icing sugar and the chosen flavoring until it is smooth and spreadable.
  2. Transfer the frosting into a piping bag with the nozzle of your choice and decorate the cooled cupcakes.

Trivia

Cupcakes are a staple of American pastry, but in this version, we have added an Italian touch by using mascarpone for the frosting, thus creating a sort of meeting between the American tradition and the Italian tradition of spoon desserts.
