Ingredients
- 4 chicken thighs
- 100 g of breadcrumbs
- 50 g of grated Parmesan cheese
- 2 cloves of garlic
- 1 sprig of rosemary
- 1 lemon (grated zest)
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Preparation
- Preheat the oven to 200 °C (392 °F).
- In a bowl, mix the breadcrumbs with the grated Parmesan, the grated zest of the lemon, the finely chopped rosemary, and the crushed garlic cloves. Add salt and pepper to taste and mix well.
- Rub the chicken thighs with extra virgin olive oil so the breading can stick well.
- Coat the chicken thighs in the breadcrumb mixture, pressing to ensure it adheres well on all sides.
- Arrange the breaded thighs on a baking sheet lined with parchment paper and bake in the oven for about 40-45 minutes or until the breading is golden brown and crispy.
- Check the doneness of the chicken by inserting a skewer into the thickest part: if it comes out clean and the juices are clear, the thighs are ready.
